On Tuesday 22nd & Wednesday 23rd May, Fredrik Berselius, of acclaimed New York restaurant Aska, will join James for a collaborative dinner at Lyle’s. The evenings will celebrate the release of Fredrik’s book ‘Aska’, which is published by Phaidon on 18th May.
Fredrik was born and raised in Stockholm, Sweden, but has spent most of his culinary career in New York, working his way through some of the city’s best kitchens. The first incarnation of Aska (Swedish for “ashes”) was found inside the Kinfolk Studios in Williamsburg in 2012. He quickly gained a following for his risk-taking, highly creative style of cooking and within less than a year he earned his first Michelin star. In 2014 Fredrik closed the restaurant to enable a move to a different site.
He finally reopened in summer 2016 and within six months was awarded two Michelin stars - the only new restaurant to receive the honour in the guide that year.
“When Freddy cooked with us before, he stood out amongst a great line up of chefs because of his calm and methodical approach, he was so focused and precise in the kitchen and his food was fantastic. Having not had the chance to get over to see Aska first hand I’m so excited to have him back at Lyle’s to see and taste his food,” James says about his experience of working with Freddy at Lyle’s’ first ever Game event, in 2014.
Fredrik’s dishes are inspired by nature, memories and the changing seasons which is shown beautifully in his debut cookbook which follows Fredrik’s culinary journey from Scandinavia to Brooklyn, highlighting flavours and techniques cultivated from these regions and interwoven to create the unique dishes that have won him so many awards and fans.
